Sake / Wine List

SMV or Sake Meter Value is a measure of the density of the sake relative to water.
It is a very general reference to the sweetness or dryness of a sake. The lower the number the sweeter the sake gets.  

Junmai Shu

Junmai refers to pure sake, pure in the sense that no adjuncts (starches or sugars other than rice added to the fermenting mixture) were used, and that no brewer’s alcohol was added either. Until recently Junmai sake had to be milled to a minimum of 70% of its original size.

Junmai Ginjo

Ginjo is much more delicate, light and complex on the palate than just Junmai. This is because the outer 40% of the grains used to make the sake is polished away, leaving the inner 60%.
